The Tokaji region - as with most of Hungary - has an extraordinary, rich history. Invasions, treaties and heroic deeds are part of the tapestry of events that make up the fascinating culture of the country.
The Royal Tokaji Winery, founded in 1990, has become one of the most admired wineries in Tokaj. At the outset, Royal Tokaji decided to concentrate on producing single-
vineyard wines, made from the First Growth vineyards of Mézes Mály, Nyulászó, Szt. Tamás and Betsek. There are in fact 28 wine-producing villages which were classified at the end of the 17th century by Prince Rákóczi into first, second and third growths. The Russian and French Emperors over the years owned, and had special relationships with, particular vineyards that produced wines for the Royal tables.
This style of wine relies entirely on the environment to allow a natural fungus called Botrytis Cinerea to infect the grapes and, by piercing the skins, utilise the water in the grape, leaving behind concentrated sugars. Production methods are unique to this region and the sweetness of Tokaj Aszú has traditionally been measured in puttonys. A puttony is a 25-liter wooden tub, which was used for harvesting the Aszú grapes. The tub is filled with only Botrytised grapes and for our wine today, six tubs (putts) has been added to a 136-liter cask of dry wine made from the Furmint grape. The sweetness is natural un-fermented grape sugar and the whole thing is held together by natural acidity, the perfect accompaniment to a dessert...
