The historic background of Champagne Ayala
Champagne Ayala was founded in 1860 by Edmond de Ayala and is one of the founder members of the Syndicat des Grandes Marques and one of the first to produce a drier Champagne which certainly seems to suit the British palate.
Champagne Ayala became a firm favourite of the British as strong relationships were fostered by Fernand, the younger brother of Edmond which led to a Royal Warrant in 1908. In the 1920s the estate was in its heyday, producing over a million bottles a year.
Like many Champagne houses, the second World War resulted in a decline in consumption and the house fell out of favour until the estate was purchased by the Bollinger family in 2005. This acquisition has resulted in Chateau Ayala being restored to its former glory with extensive renovations to the buildings and the modernisation of the equipment used in the wines’ production.
In 2012, after six years of tuition under the watchful eye of cellar master Nicolas Klym, Caroline Latrive took over the position and Hadrien Mouflard was appointed MD. Both appointments were with the aim of raising the profile of Ayala across the world bringing the brand firmly into the 21st century.
The Ayala Brut Majeur Champagne
A blend of Chardonnay from the finest soils of Cotes des Blancs, Pinot Noir and Pinot Meunier from the Marne Valley, Ayala Brut Majeur is one of just seven wines which are produced on the estate.
It characterises the Ayala style, benefiting from the three years ageing in over a mile of the underground cellars which hold over two and a half million bottles, giving it a pale gold colour with a fine mousse.
